Custom Processing

We serve our local citizens by providing quality, local livestock processing at reasonable prices.  We strive to provide our customers exactly what they want with package size, steak thicknesses and more.  Also, your meat can be wrapped in traditional butcher paper with a separate plastic lining or be vacuum-packaged.

Beef ProcessingBluebonnet-18

  • $75 Kill and Disposal Fee
  • $0.90/lb Processing on the Hanging Weight (vacuum-package or butcher-wrap)
  • $0.35/lb. for vacuum-packaging ground meat
  • $6 per Round for Tenderizing (Tenderized Round Steaks or Cubed Steaks)
  • $5 per Day for Aging Time Beyond 7 Days

Pork Processing

  • $60 Kill and Disposal Fee
  • $0.90/lb Processing on the Hanging Weight (vacuum-package or butcher-wrap)
  • $0.50/lb for Curing
  • $0.10/lb for Smoking

Lamb and Goat

  • $110 Flat Fee (vacuum-package or butcher wrap)
  • $15 extra for Frenching Bones
  • $40 Harvest and Hold (add $5 for splitting, add $10 for quartering)

Sausage Making (20 lb minimum order per variety)

  • $0.75/lb Mild, Medium, or Hot Breakfast Sausage
  • $1.50/lb Cajun Sausage
  • $1.50/lb Bratwursts
  • $1.50/lb Italian Link Sausage
  • $1.00/lb Mexican Style Chorizo
  • $2.00/lb Smoked Sausage (green weight)
  • $3.00/lb Jalapeno-Cheddar Smoked Sausage (green weight)
  • $2.00/lb Summer Sausage (green weight)
  • $3.00/lb Jalapeno-Cheddar Summer Sausage (green weight)
  • $2.50/lb Hot Links (green weight)
  • $4.50/lb Snack Sticks
  • $5.50/lb Jalapeno Cheddar Snack Sticks
  • Beef or Pork Fat may be Added at $2.00/lb
