Each ham is approximately 8 pounds, raw weight. You will receive your bone-in ham cured and smoked, partially cooked. Cook all raw fresh ham and ready-to-eat ham to a minimum internal temperature of 145°F as measured with a food thermometer before removing meat from the heat source. Each turkey is between 14 to 16 pounds, raw weight. Your smoked turkey will be fully cooked. For heating purposes, the turkey is ready when the thigh meat reaches an internal temperature of 165°F as measured with a food thermometer before removing meat from the heat source. We recommend planning on 1/2 pound of meat per person.
