Each prime rib is approximately 5 pounds, raw weight. You will receive your boneless prime rib uncooked so that you can prepare it as needed. The final prime rib temperature for rare meat is 120-125°F, medium rare is 130-135°F, and well done is 140-145°F. as measured with a food thermometer before removing meat from the heat source. Each turkey is between 14 to 16 pounds, raw weight. Your smoked turkey will be fully cooked. For heating purposes, the turkey is ready when the thigh meat reaches an internal temperature of 165°F as measured with a food thermometer before removing meat from the heat source. We recommend planning on 1/2 pound of meat per person
