Each prime rib is approximately 5 pounds, raw weight. You will receive your boneless prime rib uncooked so that you can prepare it as needed. The final prime rib temperature for rare meat is 120-125°F, medium rare is 130-135°F, and well done is 140-145°F. as measured with a food thermometer before removing meat from the heat source. We recommend planning on 1/2 pound of meat per person.
